Date Cake
Ingredients:
Dates 1 1/2 Cup (Rough Chopped)
Water 1 1/2 Cup
Baking Soda 1 Teaspoon
Melted Butter 1/2 Cup
Sugar 3/4 Cup
Eggs 2
Vanilla 1 Teaspoon
Flour 1 1/2 Cup
Salt 1/4 Teaspoon
Baking Powder 2 Teaspoon
Optional: Powder Sugar to Dust the Top
Steps:
Pit & rough chop the dates. Preheat the oven to 350 degrees.
Bring the water to a boil, drop the dates in and add the baking soda. Cover and turn off the heat.
In a small bowl, combine the wet ingredients: melted butter, eggs, and vanilla extract.
In a large bowl, combine dry ingredients: flour, sugar, salt, baking powder.
Combine the wet ingredients into the dry ingredients.
Once cool(ish), combine the date mixture into the batter. Transfer to a loaf or cake pan.
Bake at 350 degrees for ~60 minutes.

Notes:
-The baking soda helps soften the dates in the boiling water.
-Make sure to combine the wet and dry ingredients before adding the date mixture so the egg doesn’t get cooked.
